Baked Oatmeal

This recipe is just too good to keep to myself.
I tried a different variation of it this week and it turned out so yummy!

1/2 c. vegetable oil
1/2 c. sugar
1/4 c. molasses
2 small packets splenda
2 eggs
3 c. quick oats (uncooked)
2 tsp. baking powder
1 tsp. salt
1 c. milk
1 tsp. cinnamon
1 apple (peeled and cubed)
1/4-1/3 c. chopped pecans

Mix oil, sugar, eggs in large mixing bowl and whisk.
Add oats, powder, salt and milk. Stir together well. Stir in fruit and nuts.
Pour into lightly greased 9" square baking pan.
Bake at 350 for 30 minutes (or until center is done).
Serve warm with milk.

**I have been trying to eliminate sugar from my diet for some health reasons. Plus, I was out of brown sugar this week. The recipe typically calls for 1 c. brown sugar in place of the molasses, sugar and splenda. I prefer to try a molasses substitute when possible b/c it's high in iron.
The apples and pecans can be substituted for other dried fruits (I've used craisins in the past), but that combination is just perfect for a fall dish!

Can't wait to try this. I have been wanting a baked oatmeal recipe from someone I know can vouch for it. Sounds wonderful with molasses, pecans, and apples. How much better can breakfast get? Sounds like a great anytime treat, really.

I made this Sunday but couldn't find the oatmeal I had JUST bought. So, guess what? I made it with grits. It was tasty, but a bit, well...gritty. I omitted the splenda (didn't have any) and I must say I love the molasses taste. Will probably make it with oatmeal this week.

Hey, I made it again, this time with, guess what? Oatmeal! Wouldn't you know, I started dumping ingredients into my bowl before I realized another important thing I didn't have: eggs. But since I use soy milk (a few of us here have problems w/ dairy) I figured the soy would act like a binder in place of the eggs. It worked and was very tasty. If I make it for company, I think I'll use eggs for slightly better binding. We pour soy milk over it in a bowl and, wow, our new favorite breakfast!
